Grown on the high-elevation slopes of Finca La Capilla in Colombia, this coffee is a masterpiece of precision. Using an advanced Co-Fermented method, the farmers have unlocked a specific aromatic precursor that mimics the exact sweetness of Lychee fruit. Unlike the jammy "Blueberry" or creamy "Coconut," this lot is all about transparency and high-toned floral sweetness. It is a sophisticated expression of modern Colombian processing, curated for the adventurous palate.

Roast Philosophy

This bean receives our most delicate Aromatic Filter Roast. Because the Lychee note is so refined, we use a very fast roast profile with low development to ensure we don't mute the floral top notes. We treat this coffee with the same reverence as a fine Jasmine tea, focusing on clarity above all else.

  • Aroma: A bouquet of fresh Lychee, rose water, and white peach.

  • Body: Light, tea-like, and incredibly clean. It feels "silky" and effortless on the palate.

  • Notes: Dominant Lychee sweetness, followed by layers of honey and a delicate floral jasmine finish.

For floral, light-bodied coffees like this, stability is key. We recommend resting the beans for 10 to 12 days after the roast date. This allows the delicate lychee esters to fully emerge from the bean's structure, resulting in a more vibrant and "sparkling" acidity.

Brewing Guide

To maintain the "tea-like" elegance of this coffee, we recommend a slightly wider brewing ratio:

  • Ratio: 1:16 or 1:17 (e.g., 15g coffee to 255ml water)

  • Temperature: 91°C (195°F) — Lower temps help preserve the delicate florals.

  • Total Brew Time: 2:15 – 2:45 minutes
