The Origin Story
Located in the Huila region, El Mirador is world-renowned for its innovative approach to coffee. This lot features the Catiope variety—a high-quality cross between Caturra and Ethiopia Heirloom—processed via Anaerobic Natural fermentation. The cherries are sealed in oxygen-free tanks for a specific duration, allowing lactic and acetic acids to develop a deep, "red fruit" intensity before being dried slowly on raised beds.
